November is a special month to really dive into the spices of the season. What better way than to delve into the realm of pure, essential flavor, than with the liquid molecules of Love that make up your favorite herbs? Essential oils… Young Living, to be exact! And they are truly the vitality of this souper soup. Just add in a few drops each of Nutmeg, Ginger, Cinnamon Bark, and Thieves® Vitality™ essential oils and blend to perfection! I used a whole butternut squash, de-seeded, chopped, and boiled in a large pot just 3 minutes. Thrown in the Vitamix blender until a smooth pulp, then adding back to the pot, pour in a can of Trader Joe’s Organic Coconut Cream and 1½ cups of unsweetened Coconut Milk (I used So Delicious). Added with 2 tbsp of curry powder (yes, it’s a lot, but it works sooooo well!). Heat on low just to warm, stirring occasionally, and enjoy with some homemade biscuits! - 1 organic butternut squash (9-11″ long)
- 1 can of Trader Joe’s Organic Coconut Cream
- 1½ cups of organic unsweetened Coconut Milk
- 2 tbsp organic curry powder
- 1 tbsp organic dried herbs
- 3 drops Nutmeg Vitality™ essential oil
- 3 drops Thieves® Vitality™ essential oil
- 2 drops Cinnamon Bark Vitality™ essential oil
- 2 drops Ginger Vitality™ essential oil
